About the Course

The cuisine of Hawaii has been greatly influenced by Polynesian Voyagers, Europeans, Americans, Koreans, Chinese, Japanese, Filipinos, Puerto Ricans, and Portuguese. During this class students will have a chance to experience different foods influenced by these different cultures.

We will be making the following dishes:

  • Poke (an appetizer made of seafood and seasonings)

  • Musubi (a popular snack made of fried Spam upon a bed of rice wrapped in a strip of nori seaweed),

  • Portuguese Sausage Corn Soup,

  • Pineapple Chicken and Macadamia Nut Coconut Pie.
